酸菜1包, 黑魚(草魚)1條, 野山椒3根, 姜、蒜、蔥少許, 花椒、辣椒干少許, 白醋5克, 黃酒5克, 高度白酒3克, 雞精、鹽少許。

1.黑魚殺洗乾淨,去掉頭,貼著魚脊骨,片成兩大片,剔除魚排;

2.魚骨剁塊,魚肉片成薄片,調入少許鹽,抓勻,醃制5分鐘;

3.5分鐘後,沖洗乾淨,控干水分,放入碗中;

4.調入鹽、黃酒、胡椒粉、蛋清、生粉,抓勻上勁;

5.酸菜切成小塊,沖洗乾淨,鍋中放油,爆香蔥段、薑絲,下入酸菜,炒香盛出備用;

6.鍋中放入菜籽油,六成油溫,下入魚骨、薑片,大火煎至兩面金黃,放入野山椒,烹入一點高度白酒,(去腥);

7.加入清水,調入雞精、鹽、胡椒粉,大火煮5分鐘;

8.魚湯呈奶白色,倒入炒好的酸菜,調入一點白醋,煮1分鐘;

9.接著把酸菜跟魚骨撈出,墊在碗底;

10.關小火,下入漿過的魚片,煮熟;

11.煮好的魚片,連同湯汁,一起倒入碗中;

11.撒上少許蔥花、蒜沫、花椒、辣椒段,澆上滾燙油。

12.製作完成的酸菜魚,看起來是不是很不錯。
溫馨提示:1.最好挑選黑魚(草魚),魚片不要切的太碎,
2.魚片先用鹽醃一會,再沖洗乾淨,這樣使魚片更嫩更爽口,
3.酸菜一定要用李錦記牌子的,沖洗乾淨,
